Pendant 20 ans, j’ai dirigé mon propre restaurant. Les Saveurs Sauvages. Un établissement de 50 couverts, avec une équipe de 9 personnes. J’ai formé des dizaines d’apprentis et géré tous les aspects de l’activité : cuisine, gestion, rentabilité, positionnement, service. Cette expérience m’a forgé une vision globale, concrète et lucide de la restauration indépendante

En quittant les fourneaux, j’ai décidé de mettre cette expérience au services d’autres restaurateurs. Pas comme consultant théorique, mais comme partenaire stratégique qui connaît vraiment vos contraintes. Aujourd’hui j’accompagne des professionnels qui veulent : - Reprendre le contrôle de leur marge et de leur gestion. - Créer ou repositionner leur établissement. - Travailler moins dans l’urgence et plus dans la stratégie.
